Besan

Powdered pulses (like chhola dal or motor dal) are called besan. It is generally used to apply a tasty coating on fries like beguni or peyaji. Salt, chili- powder, a small amount of baking powder, and a bit of oil (one teaspoon in one cup besan) are added. Then it is made into a viscous paste by mixing with water and stirring in an electrical mixer. If you do not use an electrical mixer, you have to stir with hand by rotating the hand in one direction (clockwise or anti- clockwise, but not both) – else the bubbles break down and the foam is lost.
